Banana Mint Ice Cream with Strawberry-Orange Sauce

  • 3 ripe bananas, sliced 1/2” thick, frozen
  • 1/4 cup honey
  • 6-8 fresh mint leaves
  • 3/4 sour cream or creme fraiche
  • 1/4 cup strawberry preserves
  • 1/4 cup orange juice
  • Whipped cream, vanilla wafers, mint leaves or caramelized bananas for garnish (optional)

Remove bananas from the freezer and allow to soften for several minutes (they should still be frozen). Place bananas, honey, mint leaves and sour cream/creme fraiche in a food processor. Process until smooth and creamy. Place in a bowl or other container and return to freezer, and freeze until solid. Mix the preserves and orange juice together. At service, scoop ice cream into bowls and drizzle with sauce. Garnish with whipped cream, vanilla wavers, mint leaves or caramelized bananas if desired.
