AIRBORNE GOURMET ~ Hasselback Potatoes

Hasselback Potatoes

This is a great alternative to traditional baked or fried Potatoes. Best of both worlds. ~ Sláinte

  • 4 russet potatoes (medium size)
  • 1 tbsp bacon fat or olive oil
  • 2 tsp fresh herbs of choice (minced)
  • 2 tbsp melted butter or olive oil

Method: Preheat oven to 425 degrees. Line a baking sheet. Rub potatoes in bacon fat or olive oil and sprinkle with kosher salt. Slice a thin portion on one side of the potato to create a flat surface. Place the potato on the flat side and using two chopsticks on either side of the potato cut the potato into 1/8" slices using the chopsticks to keep from cutting all the way through. Place the potato flat side down on the baking sheet and fan out the top sliced portion. Combine herbs with melted butter and add any other seasonings you like. Lightly brush the herb mixture into the slices. Season with kosher salt, pepper, and any other seasonings of your choice. Bake for 30 minutes and then baste with the butter/oil and bake for an additional 20 minutes until crispy and golden brown. Top with remaining butter/oil and serve. ~ Sláinte
